I love cooking. I'm not certain when this particular obsession evolved, but a few years ago, I found myself watching Food Network for hours on end, and purchasing cookbooks up the wazzo. By far, the author I own the most cookbooks by is James Peterson. I like his writing style, the organization of the books, and the lovely pictures.In Simply Salmon, the book is about salmon —from harvesting, types, judging freshness, storing, filleting, and more.
One of my favorite recipes is the Herb-crusted Sauteed Salmon Fillets. I skipped making the pistou; but loved using the fresh mix of thyme, marjoram, oregano, savory, rosemary, sea salt, olive oil (extra virgin), and a dash of pepper to create the herb-crusted fillets. I added a mixture of fresh cut cherry, grape, and plum tomatoes in multiple colors, mixed with a touch of salt and fresh cilantro. Yum.
I made the Salmon with Shellfish and Parsley Broth for my mother. She loved it.
I love looking at recipes, and pictures of completed dishes; but what I like most about James Peterson book is his discussions on flavors, taste, and preparation techniques. I rarely follow recipes. I just like getting ideas about how very spices compliment various dishes or try out new cooking or preparation methods.
After reading the ins and outs of poaching salmon, I prepared a poached fillet in orange juice, tarragon, with sliced onions, and a little butter and garlic. It wasn't a planned dish, but I was caught unprepared and need a quick meal to prepare for my mom. I sauteed the onions, garlic in butter first, added the prepared salmon, the poured in the orange juice and a little water. Some couscous and rapidly sauteed mix greens rounded out the meal. I'd normally just go with a quick spinach with garlic, but because my mom's on coumadin, also known as warfarin. The medicine is to prevent blood clotting, so getting too much vitamin K is a no, no. So no spinach.
I use the World's Healthest Food website to check the vitamin levels of various foods. It's a great resource for eating well and healthy. So while spinach and swiss chard are no longer available viable options for my mother; turnips, mustards, collards, and leeks are. A quick sauteed of the mustard and turnips with a light olive oil, fresh garlic, leeks, and lemon juice complimented the meal well.
Peterson's Simply Salmon is a great cookbook for those who love salmon. It will expand your knowledge and increase your skills; enabling you to cook an array of dishes with flexibility.
