Recipe: Kale with Lemon Juice

Kale is a pretty flexible dish to serve raw. This is one of my favorite raw recipes, Kale with Lemon Juice.
 
 

So in my continuing efforts to eat at least a 33%-50% raw diet, I’ve been fiddling around with recipes for dishes other than smoothies and blended drinks. I have a few now that I really like, one being this “Asian Slaw” that I pick-up from Whole Foods, but haven’t successfully made, yet.  But my favorite to date, for taste and ease of preparation is Kale with Lemon Juice or (Lemon Kale).

Ingredients

  • One Bunch Kale (I like the red curly Kale)
  • Olive Oil (Extra Virgin)
  • One Lemon (Large) or Two Small Lemons
  • Sea Salt (grounded)
  • One or Two Medium Tomatoes (optional)
  • Red or Sweet White Onion (optional)

Preparations

Wash the Kale well, especially if its organic. Some stores, like Whole Foods, are actually very good about cleaning their vegetables for you. Others, especially various Co-ops, I shop and maintain a membership with Willy Street Co-op, and what I can consider Willy’s corner store sister, Jenifer Street Market; provide a good rinsing, but not a great wash of their food. So regardless, of where you shop, if your eating it raw, wash it well.

Next, just cut the Kale up into nice size pieces. Some people like to de-stem, but, since I tend to purchase by the bunch. I just cut of thick part of the stem, and use the rest. Toss the cut Kale into a nice size bowl. Slice the lemon and juice it into the bowl with the Kale (capture the seeds). Add Olive Oil and Sea Salt to taste, toss and go.

If you want to spice it up a bit, I add one or two gorgeous red vine tomatoes. They really bring out the color of the Kale, and add a nice flavor. Sometimes, if I want the dish to be more salad like, I’ll thinly slice red onions or sweet white onions and add to the mix as well. Both are optional, but I highly recommend the tomatoes, the flavors good, but they also make the dish very attractive.

Not including, the time it takes to wash the Kale; the dish should take 5-10 minutes to make, depending on your blade skills. It’s very easy, and very tasty.
